It's around that time of the season where the brutality of the weather doesn't encourage a walk, drive or train ride to the gym. The next best option? Eating as clean as possible. I don't know about you but eating healthier was on my New Year's Resolutions list for 2017 and with time, I have come to enjoy doing so. Staying on track this holiday season, I have come to really enjoy a well made, and well seasoned avocado toast meal with sunny side eggs for breakfast. Talk about a simple meal!
A mouth watering recipe we can all enjoy during the winter season and beyond extends below.
AVOCADO TOAST WITH SUNNY SIDE EGGS
2 slices of whole grain bread
1 ripe avocado
I. Cut avocado in half removing the center stone
II. Take out the avocado from its skin, add the salt and pepper, and mash it in a small bowl using a fork
III. Use the cooking spray on top of a small frying pan with low heat, crack the eggs open and fry according to personal taste
IV. Toast the whole grain bread, let it cool off for 60 seconds once it's done
V. Spread the avocado mix over the toast, top with both eggs, salt and pepper
